Spargel Season

OK, being German, I know spargel season is generally referring to white asparagus in Germany but it is the generic name for asparagus over there.

The first time we experienced the season was in 1989, when we went to visit neighbors who had relocated to a suburb of Munich. Everywhere you went, spargel was on the menu. Asparagus and springtime are a match to me. Tonight was a German night.

Asparagus, grilled. Weisswurst, grilled. Two of my favorite spring ingredients. Simply prepared. To me, wurst is one of those childhood memory foods. We had all kinds of wurst in the house. Leberwurst. Bratwurst. Knockwurst. Weisswurst. Bierwurst. Blutwurst. You name it. We had it on the dinner table, or on sandwiches for lunch.

I fired up the grill tonight and indulged in a trip down memory lane. Most of what was served came from farmer’s markets or local sources.

The spargel. From my local CSA. Along with spring onions from the Catonsville farmer’s market. Grilled dry and then finished with lemon olive oil, salt and pepper.

The wurst. Bought in Lancaster at the Central Market. These wurst are some of the best I have found.

The salad on the side. Tomatoes from Lancaster, served with goat cheese mozzarella, and lemon basil from my garden, bought at Sharp’s Farm. Ariston olive oil from Casual Gourmet drizzled over the top.

The mustard. Lowensenf, bought in Lancaster. First bought by me in Germany. The taste of German mustard. Something I remember from childhood.

The wine to accompany it. A sauvignon blanc from Glen Manor. That citrusy New Zealand style that will cut through the richness of the veal and the mustard, and compliment the meal.

Hmmm, other than the salt and pepper, to make this meal, we never set foot in a grocery store. Eating fresh real food, made from scratch. Evoking memories of my childhood. Can it get any better?

Rhubarb Crumble

Nothing says springtime like rhubarb. You either love it, or have no clue what to do with it. If we get strawberries soon, a strawberry rhubarb pie sounds great, but until then, rhubarb crumble is the ticket.

The other day, when I stopped at Boarman’s, these long beautiful stalks of rhubarb just jumped out and landed in my cart.

This was the same day I found the steamed shrimp. I brought it home and searched my apps for a good recipe.

The iPad is such an amazing toy. This Food Network recipe was simple, straightforward, and looked good. I didn’t follow it though. I substituted all over the place. And, I make a real mess when I bake. At cooking, I am organized. When I bake, the kitchen is a war zone.

Since I had to zest an orange for the recipe, I decided to use it plus some fennel, the last of the CSA beets, red onion, lemon olive oil, salt and pepper and make a salad to go with dinner.

The rhubarb crumble will be dessert later tonight when my hubby gets home from teaching. I will serve it with vanilla ice cream. Since joining a CSA and getting things like rhubarb in the box, like we did last year, I have become more adventurous in the kitchen. Have you cooked with rhubarb? What did you make?

Grillin’ and Enjoying a Killer VA Wine

Tonight we decided to grill using mostly local ingredients.

We wanted to try a killer wine from Virginia. This is a wine that will rival Bordeaux wines such as Pichon Lalande.

The year 2009 was one of those years where the weather cooperated in giving us big, flavorful wines worthy of cellaring. Linden had their barrel tasting the past two weekends and pre-released this 2009 Hardscrabble Vineyard cabernet dominant blend.

Dark, intense, a baby when compared to other wines. Here is an example of what winemakers are capable of producing in the Mid Atlantic region when it comes to wines. This wine won’t peak for at least ten years. It can be bought at a fraction of the cost of Bordeaux wines with less depth. It just overwhelms your palate. The filet, though, stood up to it..

The filets and the bacon were fron Boarman’s. The asparagus and potatoes from the Zahradka Farm CSA. A local dinner with a wine from the master. Jim Law has assisted countless aspiring winemakers, including Black Ankle winemaker Sarah O’Herron. He is one of those talented people who puts his heart and soul into his wines.

The year 2009 was a perfect year for making big wines in the mid Atlantic. This is the vintage to buy.

For a fraction of the cost of dinner in a restaurant, you can grill a steak and serve a killer wine. Trust me. We did dinner at Aida on Saturday. My grilled dinner with wine blew it away.

From start to finish, a simple grilled meal with an awesome wine can be had for half the cost of going out. In this area, we are blessed with wineries that produce excellent cabernets and chardonnays, at a fraction of the cost of French or California wines.

Check them out. Make a killer dinner yourself. Look at VA and MD for some big, cellar worthy reds.

One of Those Cooking Days & Getting Ready for the HoCo Markets to Open

Since I got the CSA delivery yesterday, I realized I needed to do something with all the goodies, from this week and last. The freezer is bare of stocks. I used the last one for soup a week ago using chicken thighs I bought at Roots. I also had eggs galore and beets from this week.

I dry roast my beets. Washed and placed on a bed of salt. Ninety minutes in the oven for beets this size, at 350 degrees.

They will be used for something like this, using the CSA oranges and spring onion.

The eggs will go into an egg salad for lunches. Doing these leaves me with 20 eggs until the farmer’s market opens.

As for making beef stock, I chopped up the ugliest carrots, used up the celery and last week’s leeks, and the end of last week’s spring onions to make the base.

Added my herbs and plopped in the frozen beef bones bought at Wagner’s in Mt. Airy a while back. Using these bones frees up quite a bit of space in the freezer. Put water in the crock pot and crank up to high for six hours. Then, I will be working at reducing and straining all the goodness out of this stock.

I will be the first to admit that having a CSA and getting fresh veggies means more work up front. Cleaning greens, prepping veggies, roasting, and cooking takes much longer than opening a box or container and nuking it. We used to do that years ago. I am glad I have the time to do this now. Much of it can be done on weekends, and we eat lots of defrosted soups and stews from crock pot cooking.

Once all this goodness is done, the dinners and lunches will show up in posts in the next week or so. Maybe another satisfying soup like this one from a few weeks back.

If you want good organic food at a fraction of the cost of pre-packaged, you should consider one of the CSAs that deliver to Howard County. There are a number of them out there, and I find that I spend less for good fresh organic foods by subscribing to a CSA year round. From May 2011 until May 2012, I only have one week without a CSA delivery (and that will be next week).

My summer CSA starts up on May 10th, just in time to use fresh veggies for lunches and dinners. I will be picking up in Columbia this year. Just off Cedar Lane. Thursday delivery so I can still hit the farmer’s markets on Friday and Saturday to get my meats, eggs, dairy and breads. Looks like a summer with minimal grocery store visits because Howard County has a great variety of sources for fresh foods. They are updating the web page daily and adding the vendors. Check it often to see if your market day is covered yet.

Grillin and Chillin in Locavore Style

Today was lovely. One of those days you are glad you are retired. Cleaned up the grill. Did some yard work. And grilled up a locavore meal.

This is surf and turf Boarman’s style.

We bought two crabcakes Sunday. And four mushrooms. Split the crabcakes into the mushrooms with some Trader Joe’s mustard underneath and Old Bay sprinkled on top. Brushed with Trickling Springs butter. Grilled up off the flame.

The sausages are Boarman’s sweet Italian. Not the spicy ones.

As for the rest of the meal, it was mostly CSA foods. Potatoes, onions and the defrosted peppers, all came from Zahradka. The only non-local items here were the tomatoes, but they also were bought at Boarman’s. The bread. Sourdough from Canela, bought at Boarman’s.

I did not set foot in a grocery store to buy these foods. You can have lovely meals from small stores using local sources.

The wine: the Linden 2011 Rose made from the estate merlot grapes. 2011 was the difficult year, due to the hurricane and all the rain. Lots of good grapes that didn’t get to be great wines are being used to make light refreshing wines. This wine was a perfect match to compliment crab and pork sausage.

Doesn’t get much better than this.

White Asparagus Anyone? Right Out of Your Yard?

White Asparagus. What comes up deep under the mulch if you don’t move it out of the way.

Wild asparagus grows many places in this area. The best way to find out is to look for the plants that aren’t harvested and that become small trees. This is how we found ours.

At the base of one of the crepe myrtles there are thin wispy fronds that have fallen over. They are what sprouts from the crown if you don’t harvest the plant. You can find them if you really look carefully. We found ours while mulching one year. It seems this plant was some sort of volunteer that comingles with the base of the crepe myrtle.

Today I went out looking and first saw this.

If you look very closely, you can find one spear in the upper left, and one in the lower right. We had lots of mulch built up around the crepe myrtle this spring so the rest of the spears were fully covered. Careful moving of the mulch revealed the rest.

Then I started uncovering the white ones.

White because of lack of exposure to sunlight. I also found this one hidden on the other side of the bush.

Now there are five spears coming up in total. Hopefully in two or three days, I will have enough to cut and make pancetta wrapped grilled asparagus. Foraged food. Right out of the backyard.

Do a little looking around in parks and on roadways in the area. See if you can find a source of asparagus. Don’t tell anyone you found it. Just harvest and enjoy.

That Whole Grocery Store Avoidance Thing

Who knew you could put together a pizza this good looking without setting foot in a chain grocery store? Or by eating out.

A while back, I evaluated how much better I was doing by moving from processed to whole foods and declared an avoidance strategy when it comes to shopping the easy way at grocery stores.

I called it my GGSAC and only posted twice about it. So, how am I doing at avoiding the Giant Food and Safeway stores? For the past two weeks since I started, pretty well with an exception for Harris Teeter when I didn’t feel like running across the county to Costco or up to H Mart for fish.

I have spent more time and money in Boarman’s, Roots and David’s so far this month. I have been using up pantry items bought last fall, and have also put together a bag full of stuff to take to the Food Bank. If it makes me sneeze, it is out of here. If it has a long list of additives, same thing.

Thanks to Nicole at Hoco Loco for commenting that she saw Meyer Lemons at David’s. Yesterday we made it there to do some shopping that included locally made sausages and the aforementioned lemons. Looks like National Boh Brats on the grill this weekend maybe. Made in Baltimore.

I got a few things necessary as well to make a killer pizza tonight. The cheese, oh, the cheese. My favorite Mountain Top Bleu from Firefly Farms, bought at the Silver Spring Market.

Pancetta, bought at David’s Natural Market. The pizza crust came from Roots. The fig butter was in the fridge, and from Trader Joe’s.

The greens, from my garden, the asparagus, the first delicate spear from that wild plant under the crepe myrtles. Finished with a drizzle of Ariston olive oil bought at Casual Gourmet, this pizza is so satisfying.

Dinner was served with a 2002 Linden Cabernet Franc, still hanging in there after ten years. Full of fruit, a hint of smoke, not tired or fading. No bell pepper taste that Virginia francs sometimes exhibit. This lovely wine balanced the sweetness of the fig butter, the saltiness of the pancetta, the earthiness of the cheese, and the tang of the greens. What a great combination and a satisfying meal, NOT courtesy of boxed supermarket pizza.

Winter CSA Week Fifteen

Since we have another freeze warning tonight, I suppose we really aren’t out of winter yet. March was the warmest on record around here so we were getting used to seeing spring type veggies in the box. Today we go back to the reality of cooler weather and the veggies associated with it. I just got finished covering the garlic, lettuces, tulips and chive seedlings again.

We got an email saying the farmer who supplies us meat was MIA last night, so no meat this week. Double portion next week. That is OK, since I went to Harris Teeter yesterday and stocked up on seafood. Sustainable, of course.

Crab cakes for dinner last night.

I was using up most of the spinach from last week, with green onions and potatoes and local mushrooms bought at HT.

This week, I got:

1 1/2 pounds of carrots
4 nice spring onions
2 large leeks
1 pound new red potatoes
4 oranges from the partner farm in FL
1 beet that weighed 28 ounces

Add that to the beet from last week.

They are slow roasting on a salt bed in the oven for a few hours, until tender. They will become part of a salad with goat cheese and the last of the spring greens from a delivery a week ago, for tomorrow night’s dinner with some Alaskan wild salmon.

Since it is almost Easter, I have to show the cool eggs we got.

I particularly like the green one. I am hard boiling about 6-8 of them tomorrow, the prettiest ones. They will get taken to my brother’s for the Easter Egg Tapping contest.

I am drowning in eggs again. With this dozen today, there are 30 eggs in the fridge. I know now that two dozen a month is too much. Without a large family, or a baker in the house, I don’t know how people go through the eggs they get in local CSAs. I think in the future I will probably pass on eggs in the winter CSA.

Dinner tonight will be pan seared scallops from Harris Teeter, with baby red potatoes from the CSA, and salad to use the last of the spinach. I wonder if Harris Teeter is the store most affected by Wegmans coming in. I like the way they make sure you don’t stand in line too long for checkout. I also like the guys making sushi. We went there for things they have the best selection of, like fennel, ginger and some of the more exotic mushrooms. They do have nice produce but I am carefully reading the labels to buy items from the closest sources.

The CSA provides me with a solid basis to menu plan. The few extras needed to make interesting dinners are all I want to purchase from other than local vendors. That way, I am making what I call the 90% solution locavore dinners. Every little bit helps.

Revisiting My New Year’s Resolutions

Well, it has been three months since New Year’s. I revisited my post made on the 30th of December to see if I actually am doing what I said I wanted to do this year.

Resolution #1:

    I do resolve to be more creative and expand my culinary boundaries to include more baking, and more ethnic foods outside our European heritage. I do intend to continue being more and more of a locavore, and use up as much processed stuff in the pantry, and not replace it.

Well, the Dark Days Challenge was a way to expand what I eat locally. I haven’t been baking much, unless you count those black bean brownies a few weeks ago.

And, the pantry is still pretty full of processed stuff, because I am eating mostly CSA and local meats. I need to continue to clean out what is in there, and not replace it with more of the same.

As for ethnic foods, haven’t done much there either. I will challenge myself from the spring/summer CSA to use those Asian vegetables in ethnic dishes, not simple stir frying, but really trying something new. Not chicken chow mein with the bok choy. And, I resolve to not swap the peppers, like the habanero or jalapenos we get. Make my own salsas. Attempt a mole sauce, too.

Resolution #2:

    I intend to can more things, pick more veggies and fruits, and process them. I need to get a freezer and buy something at the fair, from the 4H’ers. Maybe lamb, or goat, or part of one of the steers or hogs. Our friends’ children raise animals to bring to the auction. We want to support them more by making it worth their efforts.

Not there yet. This is a summer time thing. I do need to get off my butt and buy a freezer if I want to do this. Larriland for strawberries isn’t that far away. The auction at the fair is on our list to do this year as well. Last year we just observed.

Resolutions #3 and 4:

    Is this the year we get the chicken coop? Haven’t made that decision yet, but we are working on it.

    I want to build a cold frame. Will I find the time?

Not gonna happen, due to my health changes. Recovery from surgery got in the way of doing these. Plus, I need to make sure we don’t have problems with predators, and research the best coops to buy. We have a new addition to our predator community.

Not the best picture of the red fox who has been hanging around. I took it through the screen so as not to spook him. He was hunting something in the meadow and paced back and forth many times. Yesterday I wasn’t fast enough to grab the camera as he ran through our yard carrying something large in his mouth. I think it may have been one of my neighbor’s chickens. It was just before sunset, and if you leave the chickens free range too late in the day, they become dinner for the fox.

As for the cold frame, it will get put off until fall.

Resolution #5:

    We still need to clean out the stuff we accumulated at our jobs, which sits in boxes in the attic and garage. That is a priority.

We are making some progress here. The shredder is working overtime. And, at Greenfest I will be getting more out of the house and garage. I have been going through old pictures and keeping those I want by scanning them into the computer. Less paper around here will be a good thing.

The Summary:

    do new things including expanding what I do in my volunteering, like geocaching and giving presentations. Another priority. Looks like I have enough to do, and I’ll see how it turns out in my second year of retirement.

There are numerous programs at the Conservancy this fall where I will be doing presentations, and where I will be using the geocaching skills I am learning.

All in all, not a bad start to doing what I want in 2012. Putting them down in writing here in the blog makes it harder to ignore them, or lose them. Let’s see if I do more in the next three months.

Family Favorites

Going to my brother’s house for Easter. It is a tradition for us to get together at holidays. Our family was large and always had major events, either dinners or picnics or reunions.

For us, at picnics and other events, we are always on the hook to bring wine, since we collect it. This year, I think I will be bringing the Breaux Viognier, which will complement the ham.

Lately though, some of my favorite recipes are asked for, time and again, as a contribution. My brother requested my herb roasted onions, something I first took there for my mom’s 80th birthday party picnic, in 2009. It is a simple Ina Garten recipe, that I have adapted to my taste. I change how I make the vinaigrette depending on what is in season and what I have in the fridge.

First, get lots of diffferent onions.

You will peel and cut these so the bottom stays together. You want whole wedges to roast. Make a simple vinaigrette like this one, using mustard, oil, balsamic, herbs, salt and pepper. The more herbs, the better.

For the vinaigrette, you need a good mustard. I will be using the last of my ramp mustard from Spring Valley.

Toss the onions in the vinaigrette, and roast at 400 degrees for 30-40 minutes. Keep some of the vinaigrette left over to pour over the finished product. The beauty of these onions is the fact that they can also be served at room temperature. I can make them Sunday at noon, and they will be fine at 3 pm, when we serve dinner.

A Food Network pic, since we aren’t at Easter yet. This is a simple basic recipe, easy to double or triple. Make as much or as little as you want. I make huge amounts of the vinaigrette and use it for salad dressing during the week. Make enough to coat the onions before roasting, and more. For me, that involves the ratio of 4:1:1 of oil, vinegar, and mustard. You can also make it with lemon juice instead of vinegar. Be creative.

And, make memories with your family, like we do every year.
