Event Overload Again

The third weekend in May. Absolutely one of the most overbooked event weekends around here.

Wine in the Woods. Both days, Saturday and Sunday.

The Preakness. Saturday is the race in Baltimore, and the Balloon Festival at Turf Valley the 15th-17th if the weather permits it.

The Columbia Triathlon is Sunday morning. Our love/hate relationship with this event depends on whether we need to get anywhere by car that morning. We live right off the bike race route.

The EC Tasting Gallery Pop Up at Bistro Blanc is Sunday night.

There is a Family Open House at Belmont Saturday morning 10-12, with guided hikes and other goodies. The Howard County Conservancy is providing environmental educational programs at the Belmont site.

We are volunteering for Big Cork at Wine in the Woods.

Been fans of their wines since they opened the winery. Love the chardonnay, and really am looking forward to the release of their first red wines this fall. And, their new building out in Rohrersville.

As for that pop up dinner, we will be there. I can’t wait to see what the EC chefs and Chef Johnny at Bistro Blanc create in a culinary culture tour.

If I can drag myself out of bed Saturday morning to see the mass ascension at Oh-Dark=Thirty up at Turf Valley, I will be doing that too.

Belmont does interfere with Wine in the Woods. Darn. Van Wensil is leading two guided hikes which should be wonderful to do.

Sunday morning finds us cheering on the leaders in the triathlon as they pass the Royal Farms at the circle where Dayton and Glenelg meet. We like heading up there for coffee and bagels and to watch the world class athletes as they head out, and then back, from their loop out to Triadelphia.

And, can’t forget to sit out and watch the Preakness while sipping a Black Eyed Susan. Last year they changed the recipe for the cocktail. Sounds really interesting, if you have St. Germain around the house.

What are you doing this weekend? Are you guilty of event overload, too? I’ll need a week to recover from all this entertainment.

Oh, and the azaleas at Brighton Dam are still blooming. If the rain the next two days doesn’t mess them up.

Scones, Scallions and Spice

Busy week. Making scones for the first time. Harvesting spring onions in the garden, aka scallions. And, cooking with Indian spices tonight.

Let’s start with the scones. Made for the Mother’s Day event that was canceled. At least I only made the test batch before we got word that predicted heavy rains for today would make it potentially abysmal in the gardens. Turns out the rain was about an hour later than predicted, but we all know about those weather people. Not to be trusted, or believed. (Just kidding, it is hard around here to figure out the weather patterns).

As for those scones.

Blueberries and peaches mixed with peach yogurt. Good peach yogurt from Pequea Valley.

One cup yogurt and one cup fruit. I used defrosted blueberries and peaches, from my Larriland picking last summer. These were added to the other ingredients at the end. I started out with 3 cups AP flour, 1/2 cup cane sugar, 2 tbsp. baking powder and 1 teaspoon baking soda. One stick of very cold unsalted butter added to these and mixed until the texture of a cornmeal. Dump in fruit and yogurt. Bake at 350 degrees for 15 minutes. Sprinkle with powdered sugar.

Next, let’s talk about the garden, and the newly harvested scallions.

I was thinning the white onions today. Took out three scallions that will grace the dinner table tomorrow. My first items this year.

Finally, the spice. The Indian inspired dinner.

Spiced chicken with yogurt sauce. I started out with a recipe but didn’t really follow it at all.

Except sort of, for the yogurt sauce. Easy to make. Big on taste. 6 ounces plain full fat yogurt. One lemon, juiced and zested. One tbsp. cilantro, chopped. Couple of shakes of ground ginger. 1/2 tsp. garlic powder. Salt and pepper to taste. Mix together. Put on everything! This stuff is incredibly tasty.

I had leftover chicken breast, cut into cubes, or strips, or some of each. About 8-10 ounces of chicken. Made a dry rub. Tsp. of cumin. Tsp. of coriander. 1/2 tsp. of paprika. 1/8 tsp. of cinnamon. 1/4 tsp. ground cayenne. Two garlic cloves, minced. Lemon juice and zest. Salt and pepper. Mix with chicken, then cover in olive oil and bake for about 10 minutes at 350 degrees (if it was already cooked chicken). With raw chicken, this would need 20 or so minutes at 400 degrees.

Serve with whatever bread you have to sop it up. I used the olive bread from The Breadery.

Serve it also with a wine that can stand up to the heat of the cayenne. I used a Traminette from Big Cork.

Let’s see what sort of goodies I can make tomorrow with those chicken thighs in last week’s basket.

Keeping It Close …

… to home. As in eating regionally. More and more foods that come into our house are regionally sourced. And most of what we eat are items that we make.

I just finished the next to last lamb from England Acres this weekend. It was a loin roast, that we grilled Saturday night.

It ended up feeding us for two nights, as we finished it tonight with a bunch of thrown together side dishes. We bought half a lamb last April. All that is left are one package of ground lamb, and one rib roast. There were 24 pounds of lamb in our delivery.

We didn’t order a lamb this year, as we are getting a good variety of locally sourced meat from the Friends and Farms basket.

Along with the lamb last night, we grilled a few of those lovely potatoes that were in this week’s basket. And some pesto rubbed bread.

The potatoes were coated with garlic powder and rosemary. Olive oil too. The bread, from Wegmans bakery, had a coating of red pepper pesto.

The lamb was marinated in red wine, garlic, olive oil, salt, pepper and rosemary.

Tonight the last few pieces were served with some collard greens, and a grilled naan with pesto.

Those greens. Sautéed in olive oil, with scallions, the last banger, garlic, white wine vinegar, lemon juice, and cayenne flakes. Who can resist perfectly cooked collards with that brightness of the lemon and kick of the garlic and cayenne.

Tonight, though, the star may have been the last Elk Run 2001 Cabernet from the cellar. Yes, 2001. Thirteen years old. From Maryland. And still hanging in there. Light. Soft. Almost sweet, since the tannins have faded. Who says Maryland can’t make good wine?

So, the lamb was from Mt. Airy. The wine was from Mt. Airy. Can’t get much closer for wine and meat. And, better than many restaurants. Not a bad start to grilling season, and spring in Maryland.

Grillin’ Tuna

Hooray, springtime arrived for a day! It will probably be gone tomorrow but you know we should celebrate when we can.

My grilling choice was influenced by a post on a new local blog. The picture of the ahi reminded me we had lovely tuna steaks in the freezer, after a buying spree from Friends and Farms last month.

We chose some extra tuna and put it away anticipating a lovely day like today.

Turns out this was a really local feast. The tuna, green beans, green pepper, and sweet potato all came from F and F baskets.

Add to that one awesome 2001 Elk Run Cabernet. That’s right. 2001.

Who would have known that Maryland Cabernet could be soft, subtle and compliment the tuna so perfectly.

Grilling was a real joy today.

Green beans from the IQF packet. Scallions. Green pepper. Sun dried tomato and garlic from the olive bar at Harris Teeter (seriously, get a container of stuff from them and use it everywhere). Italian vinaigrette for the marinade.

Spring may only be a day long around here, but tonight. Dinner was regional sourced, and excellent.

Pizza? Frittata?

So, what is it?

A frittata without potatoes? Or a Pizza with no crust?

Inspired by the Swiss Chard from last week’s basket.

Besides. I needed to use up some eggs.

I started with some leftover thin sliced sausage. Reminiscent of pepperoni. Sautéed with scallions and garlic and sun dried tomatoes. Chard added to wilt down.

Eight eggs whisked with a little milk. Leftover mozzarella.

Everybody into an oven proof pan and put in a 300 degree oven until browned.

Looks like a pepperoni and cheese pizza meets an eggy crust.

We had half of it tonight and the rest will be brunch this weekend.

The star of the dinner though? A 2001 Elk Run Liberty Tavern Estate Cabernet Sauvignon. Found in the cellar. Still hanging in there!

My Take on Cassoulet

A favorite one pot meal. Cassoulet. With all sorts of options and the ability to use what you have hanging around in your fridge.

Served with an excellent local Big Cork Chardonnay. The last one, so it must be time to head up to Frederick for a few more bottles.

This dish came together because I had leftover chicken breast and garlic sausage. About 6 ounces of chicken breast and the same amount of a fresh kielbasa. They were both main elements of last weekend’s meals.

Start with the base.

Olive oil heated in the pan. Added one sliced yellow onion and a handful of scallions sliced. Half of a green pepper. Three roma tomatoes, sliced. Half dozen cremini mushrooms. Other than the scallions, the rest of this dish was in last week’s delivery from Friends and Farms.

When the vegetables are soft and the onions translucent, add the sausage and chicken. Deglaze it all with a splash of white wine and some stock. Empty a drained can, or two if you like beans, of either cannellini or Great Northern beans. Some fresh basil, slivered. A couple of cloves of roasted garlic, smashed, or a teaspoon of garlic powder. A teaspoon of herbs de Provence. A little salt and white pepper. A teaspoon of tomato paste.

Put everything in a low setting in the oven. I use the slow cook setting, which is 250 degrees. For about an hour for all the flavors to meld.

This picture is the before the oven photo. The plate up top is the “brown” version. It may not be the prettiest dish out there, but it definitely tastes wonderful.

You don’t need duck to make cassoulet. It works just fine with chicken. Not a bad mostly locally sourced meal.

Winner Winner Chicken Dinner

Ordinarily I am not a big fan of chicken breast. Usually too dry and without the taste that legs, thighs and wings have (at least to my taste preferences).

I tried a new technique for me, and made a very satisfying dinner tonight. Half the chicken in dinner, and the rest will become a chicken corn chowder base in a day or two.

Made in a stir fry pan. Here is what I did.

I had a pound of boneless chicken breast from our first Friends and Farms basket. I wanted chicken pieces that were moist. So, I started out with the chicken fat that had been skimmed off the stock I made with a whole chicken last week. I heated it up in the pan and added the chicken in strips and cubes. Let it cook slowly in the “schmaltz”. Pulled out the chicken and removed all the fat from the pan.

Put in my base.

Remember that jam jar dressing recipe from last week? Made with maple yogurt and Dijon mustard. Well, over the weekend I made another batch right in the mustard container, using equal amounts of mustard and yogurt and adding the cider vinegar and oil in the appropriate ratio. I put some coconut milk in the pan, about six ounces, added two teaspoons of flour, salt, pepper, and a healthy squirt of the mustard dressing. Made a white sauce. Added about four ounces of my oven roasted cherry tomatoes, taken from my freezer. Put the chicken back after adding another couple of ounces of milk to get the consistency I wanted.

A little sprinkle of tarragon, and of paprika. Kept on a low simmer while I made some of the Pappardelle’s pasta from Secolari.

I used about four ounces of the pasta that made two servings of pasta. Added about half the chicken mixture. That leaves me with half a pound of chicken to make the soup later this week.

Served with a Maryland Chardonnay from Big Cork. The 2012 vintage. Perfect match to the creaminess of the sauce, this big chardonnay balanced the meal. The salad. Made with the Bibb lettuce from last week’s basket.

I have to admit. It is easy around here to eat locally, even in the dead of winter. The chicken. The tomatoes from the freezer. The schmaltz from a local roasting chicken bought last fall. The yogurt in the dressing. The lettuce. The wine.

I am glad we signed up with Friends and Farms for the winter. Gets me into making new dishes, and expanding my recipe collection.

Now I need to pull the frozen corn from the freezer and make that soup soon.

My Local Little Christmas

This year I managed to buy almost every gift I gave from local artisans, farms, small businesses and people I know.

With the exception of regifting some books and some vintage jewelry from my late mother in law’s collection of fun costume stuff.

I didn’t post until after the presents have been given.

For me, reducing waste and my carbon footprint have driven me to look locally for my food, my services, my choices in giving, and just generally in how we live.

Call it that “greening” thing.

I still have a few indulgences that can’t be found locally. Like avocadoes. Spices. Citrus.

But, by and large, I prefer supporting people I know, all year round.

Some highlights.

Local wines. Taken to drink at my brother’s. And given as gifts. This year, it was mostly Big Cork.

Drinkable, approachable wines, to take to dinner when ham is on the menu. The Vidal Blanc and the Traminette.

Fun gifts. Like the soaps from Breezy Willow. Wild Woman is one of my favorites.

Dinner tonight featured many local items too. Tomorrow, my post will be about replacing those expensive dinners with easy to prepare local feasts.

To paraphrase, have yourself a local little Christmastime. Think about it as you get ready for New Year’s Eve. More on suggestions for the upcoming holiday later this weekend.

Resolutions

I didn’t make New Year’s Resolutions last year. I decided to challenge myself in my 60th year to do sixty things.

It was interesting. Fun. Not totally successful. But fun. I may try something similar this year.

Like finish the list in the areas I didn’t do very well in accomplishing.

My list —
Visit six festivals and/or fairs that are new to me
Taste at six new wineries never visited before
Seek out six new farmstands or markets to expand my locavore network
Do something different or visit someplace new in six states other than MD
Eat at six small business restaurants and/or diners
Eat/drink or experience six childhood memories
Log six new birds not seen before
Cook and eat six new proteins, i.e., meat, seafood, beans or nuts
Grow and/or eat six exotic fruits, veggies or herbs
Tackle six rightsizing projects

I am proud of myself in really taking on those rightsizing projects and pushing myself to get rid of things.

I hit more than enough wineries. Getting out of the rut of going to the same places. Discovering new and not so new places in MD and VA.

Farmstands and markets were successful too. Fruits, veggies and herbs, yep, did those too.

Where did I fail? Not getting out of MD, VA and PA. I really have become a stick in the mud when it comes to traveling. We did the trip to Roanoke and a few trips to PA. Found a few new towns in MD.

Never made it to DE or WV or NJ or NY, like we planned.

I was lucky in getting three new birds. Not by traveling, though. What were they? The guinea hens, the screech owl and the great horned owl. Thankfully, the program on creatures got me two close encounters with delightful creatures.

Hit more than enough childhood memories, too.

I should take inventory of how much I did. And, decide what to do next year. I am a firm believer in challenging myself, so as not to get stodgy and set in my ways in retirement.

After all,

As for wine, we can add Big Cork, Old Westminster, Early Mountain, Doukenie, Port of Leonardtown, St. Michael’s, Villa Appalaccia, Ankida Ridge and Valhalla to the list of new wines and wineries discovered this year. Not bad.

One Snowy Sunday

And it still isn’t over. There are at least five inches of snow on the ground, and we are crossing our fingers that there won’t be much ice tonight.

Around noon, things were somewhat under control but with more snow and now freezing rain, getting up the hills could be interesting. I am so glad as a retired old person that I can sleep in tomorrow and avoid that rush hour mess around DC.

We always got a bit more snow and ice here in the western edge of Howard County. Our elevation of 600-800 feet across these parts is high enough to be a few degrees colder, and we see it in our snow fall totals.

This is the beginning of the heavier snow and ice on some of our ornamental grass. I hope tonight that the evergreens are spared the ice load. A few years back, we lost quite a few limbs on our pines and fir trees.

Watching football with a glass of Old Westminster Chardonnay, and some Bowling Green cheddar. Nice to be inside and warm. Wish us luck, to keep us from losing power!
