Polenta (from a long time ago)
Trickling Springs butter

First, I browned the short ribs.

I like cutting them into individual portions and browning them in olive oil.

In the crockpot:

All of that gorgeous kale. Three baby leeks. Two scallions. One pint of my basic tomato sauce made last September and frozen. Four cloves roasted garlic. Salt and pepper. The ribs were then placed on top with their pan sauces.

Cooked for eight hours on low. Falling apart ribs. Tangy kale.

I then made a quick polenta. 1 cup polenta whisked into three cups of water, that had 1/2 tablespoon of salt added. Whisk until creamy, then add two tablespoons unsalted butter.

Put the polenta on the plate. Cover in kale and short ribs. Open a good local red wine and you have a locavore meal.

Berry, Berry Good

Both my food sources delivered strawberries today. There will be some creative cooking going on.

Today Lancaster Farm Fresh began the fruit shares for those of us who opted for this add on. We got a jar of their incredibly rich “just apples” applesauce. Too bad we didn’t sign up for a meat share. They got boneless pork chops.

Breasts, thighs and legs. 4.5 pounds of chicken. I have been so impressed with what we get, as always.

We get an email in the morning telling us what was selected. We do get advanced notice on Tuesdays, of the expected crop picking. But, it does change slightly.

There were nine items in the half share today. I did swap the cilantro, as I grow it, for that lovely fennel. There will be fennel, orange and red onion salad soon. I am impressed with the size of the leaf lettuce, and the romaine.

The bonus. Those radish greens, which are edible and quite tasty, albeit a bit peppery.

The CSA pickup was this afternoon. This morning I also got our Friends and Farms basket.

OK, I was brave and took the mussels, even though I don’t eat them. My husband was thrilled with them. They are gone already. Tonight’s dinner. White wine. Mussels. Butter. Shallots. Garlic scapes. A teaspoon of flour. Classic mussel dish. Served with the baguette from The Breadery.

The rest of this week’s protein and dairy. Short ribs and Ewe crème cheese. We also got baby bok choy, zucchini, baby bellas, broccoli, asparagus, spring mix, and those strawberries.

There will be stir fry on the menu this week. And, lots of salads.

Tomorrow night, slow cooked short ribs over greens.

For the Saturday night movie at the Wine Bin. Mushroom pate. The rest of the baguette. Chicken salad. Strawberry salsa.

Fresh Food Overload

As in too many sources of what came into the house today.

Friends and Farms. Lancaster Farm Fresh. Foraged asparagus. Harvested spring garlic and garlic scapes.

Is it any wonder I get overwhelmed. At least I didn’t pick veggies at Larriland today.

Scapes and spring garlic. Let’s start with the back yard. I have 18 plants out there. Two, I found to be waterlogged and a loss. Four I harvested today. They were too small to become heads of garlic. Hence, spring garlic. With a couple of scapes in the mix.

Asparagus. A couple more spears of my wild asparagus. There are two more ready to be harvested in a day or two. Not bad, but this year much less than previous years.

Lancaster Farm Fresh Cooperative CSA. This is week three of the spring/summer CSA. I have a half share. Today eight items plus my weekly chicken share.

We got:

Salanova lettuce
Kale
Garlic Scapes
Frisee
Strawberries
Scallions
Red leaf lettuce
Yellow chard

A whole chicken this week. A Freedom Ranger heritage chicken.

The chard already made it into tonight’s frittata.

As for Friends and Farms.

This week was my eggs and yogurt week in the rotation. Proteins included chicken breast and a pork chop (destined to become an Asian element of a stir fry).

Green cabbage and carrots. There will be cole slaw.

That’s because we had a pork butt a few weeks back that is happily becoming pulled pork compliments of 100 days.

The rest of the basket included Asian greens, broccoli, scallions, hydroponic tomatoes, strawberries, and sweet potatoes.

I like getting small amounts of varied vegetables.

This method of shopping has been interesting, and a challenge to boot. Some days the large amount of greens is intimidating but it’s good for us.

Memories of the Navy … in Bean Soup

Every week at White Oak. Bean soup on the lunch menu. Really hearty. Full of flavor. Similar to what is served at the Senate. And in the Pentagon.

For me, that soup was a filling comforting bowl of warmth in the middle of winter. I have been working to perfect my own version of it.

Senate bean soup includes butter. Mine doesn’t.

Mine takes five ingredients plus salt and pepper. Beans. Scallions. Ham hock. Broth. Garlic.

Yesterday I soaked, then cooked the white beans from the Friends and Farms delivery. This morning I put them, and a pork hock and a pint of veggie broth in my crockpot. Added four cloves of garlic. A half dozen scallions.

Let it cook for eight hours. Pureed half of it (minus the pork). Shredded that pork about an hour before serving.

It came out like this.

Enough for two meals. Dinner tonight and lunch later next week.

Tonight we served it with warm garlic naan and a 2012 Linden Avenius Sauvignon Blanc. A crisp flinty SB, to cut the creamy richness of the soup.

Beef! It is What’s For Dinners

Twice the past few days we have had beef on the menu. Really good beef. Not bought at grocery stores but from local farms and butchers who use local farms.

Short ribs over polenta.

Both from Friends and Farms.

The ribs were seared first and cooked in the crock pot until they were falling off the bone. Polenta was cooked on the stove and served with some onions and greens.

If that wasn’t good enough, tonight I wanted to use my Christmas present. My rice steamer.

I had a white rice and wild rice pilaf mix from the Shrewsbury Amish market bulk store. My husband wanted beef to go with it, so I cooked a couple of very petite 3-4 ounce filets from England Acres.

They started as a pan sear, then I added mushrooms, peppers and scallions. Finished with the Pacific brand mushroom soup.

Served over the rice.

Since my rice cooker makes two cups of rice, I used half the mixture in some turkey rice soup. I need to bring a dish to the Conservancy pot luck Thursday.

So, today was truly a major cooking day. But, the rest of the week there will be good leftovers.

Meal Planning

Something I vow to do. But, it doesn’t always get done.

This week, though, we have quite a full calendar. Lots of people coming, for work estimates, including those to clean up from the burst pipe.

My better half has two amateur radio dinners, so I need food for my dinners at home.

A fellow blogger, part of my group that did an Eat Local challenge, had a post today that reminded me about the importance of planning ahead and using items in their prime.

Slow cooker recipes are always my favorite. Like my venison chili.

Using my freezer items. The last of the ground venison. My roasted peppers aka the chili starter. Larriland tomatoes, that were blanched and frozen whole.

Half the turtle beans from the Friends and Farms basket. They were soaked overnight. Drained, rinsed and cooked until almost done (making sure to boil them for ten minutes before simmering for two hours). Also adding that tablespoon of baking soda, recommended for those of us with hard water.

The other half of the beans were simmered on the stove, with half the basmati rice I made the other day in my Christmas present. My rice cooker. The half of the beef sausage not used in the frittata.

I now have three more meals from the chili I made. A meal from the black beans and rice with sausage. And, leftover lasagna. Most of those leftovers were flash frozen in order to keep them fresh. I bring them out early in the morning into the fridge. Put them in the oven on the slow cook setting, while we handle all our daily things.

Dinner is ready and waiting without time spent on our busy weekdays.

I have to say, my favorite items around here are: the crock pot, the rice cooker, and the chest freezer. It makes it easier to cook in advance, when I have spare time. During those hectic days, I have the equivalent of “TV dinners” in the freezer, that are simple to pop in the oven.

The other thing I did Saturday was cook all the potatoes, and half the eggs, for salads.

I wasn’t always this organized when I first joined a CSA in 2010. We gave away quite a few items, and some rotted before use. It has taken three years to get to this state. Where I can efficiently use CSA items and make use of those frozen goodies.

This week, though, I need to find something more interesting to do with those lovely portobellos still in the fridge. They are really nice looking, and I am thinking about stuffing them. Or maybe a mushroom lasagna. I still have some Secolari noodles in the pantry.

Even when I plan, I get that urge to be creative. Great ingredients from our local sources make that easy, too.

Frigid Weather

The next few days are going to be tough to deal with, around these parts. Temperatures below zero degrees tomorrow night.

We have snow on the ground and the birds are pretty active looking for food under the patio table and around the deck. We have unfortunately also had a number of hawk attacks. Lost a few small birds.

I am keeping the bird bath full. It is amazing watching them get into the basin and fluff up their feathers after dunking themselves a few times.

We now have quite the collection of red bellied woodpeckers. There were three out there yesterday. I refilled the suet holders for them.

Tomorrow (today by the time I post this past midnight) is Little Christmas, the day I usually take down the decorations. I think that will occur later in the week when it warms up.

The tree needs to be taken out to the landfill later also. They recycle them into mulch. As for the garland, it will become a bed around the rhododendron, where the pine needles can continue to add some acidity to the soil.

I have been heavily using the crockpot, making another batch of venison chili today. I learned a lesson though. My method of putting frozen items in the pot has resulted in a hairline crack in the ceramic insert.

Thankfully, I do use the liners. Still, I have to buy a new insert. And stop putting the pot on high.

I am slowly making my way through the Larriland tomatoes in the freezer. Next year I will be getting many more than this time, as they make a world of difference when used in soups and chili.

As for the next few days, I think we will find some indoor projects to tackle. Until it warms up a bit.

Santa’s Little Helper

At least in our house, the major helper as I prepare for Christmas is right here.

Yes, it is the crock pot. Without it, trying to accomplish all the decorating, cleaning, baking, writing cards and wrapping presents would be quite a bit more complicated.

I have to admit, I didn’t use my old crock pot very much. With my long work hours, I wasn’t able to time things for them to be ready when I got home. They usually were mush after my eleven hours out of the house. Working in DC meant long days.

I have pretty much perfected the timing these days. Get everything out of the freezer by nine. Crock pot started before ten. A six hour cooking on high setting, with the warming function keeping dinner warm until we are ready to eat about six.

Soups are the best thing to make using items from my freezer. Add a jar of chicken stock, some tomatoes maybe, whatever protein works best and then fill in from the CSA veggies.

I have a tag in the blog. Crock pot soups. Lots of variations using some very basic items.

Any sort of greens from the CSA will make a very good base for soups. Like the kale from last week.

A pint of stock. A couple of ham bones from Copper Penny Farm. A couple of cans of organic cannellini beans. A few carrots, some celery and an onion. That’s all you need to make bean soup for dinner. Oh, salt, pepper, garlic powder.

If you get really busy during the holiday season, consider using that crock pot to make some rich flavorful soups. So far this week I have made three different soups. When the temperatures get down below freezing at night, soups, stews and chili are our favorite meals.

It’s Been A Soup Sort of Week

Seems to be the norm this week to have soup for lunch or dinner. What with a second snowfall today.

At least we got the snow thrower some hours. I think it hasn’t been used in two years. My husband had everything done in about an hour this afternoon. All told, between the two storms we had about seven inches of snow on the ground.

It even brought the red bellied woodpecker up close to the house, something she rarely does.

While we were out there, the crockpot was on, with my latest version of cauliflower leek soup bubbling away.

The secret to my soup? Garam masala. It makes it much more complex in flavor.

The recipe:
1 small head cauliflower, broken into pieces
4 medium leeks, sliced, white part only
2 scallions, sliced
4 medium Yukon Gold potatoes, parboiled first
1 pint stock (I used turkey)
1 pint almond milk
2 tsp garam masala
1 tsp pepper
1 tsp garlic powder
1 tsp salt

Everything in the crockpot except for the almond milk, for six hours on high, or eight hours on low. One hour before serving, I pureed most of the mixture, leaving about 1/4 of it in its chunkier form. After pureeing it, add the almond milk for the last hour to give it the creamy texture.

Tonight we dressed it up a bit.

I had a package of Copper Penny Farm mini chorizo in the oven on slow cook (250 degrees) for that last hour. Placed a few of them, with some of their juice, over the soup.

A mostly local meal tonight. Just the spices and the almond milk, not local. Warm, satisfying. It’s interesting how soup is one thing we love to have when the “weather outside is frightful”.

Turkey Lurkey

My mostly local Thanksgiving meal. Done tonight for just the two of us.

Pretty traditional this year. Roasted turkey. Green bean casserole. Mashed potatoes. Sausage dressing.

Every element of the meal had local ties.

Let’s start with our turkey. An eleven pound Maple Lawn Farm fresh “hen”.

Brined for sixteen hours in advance. I found a basic apple cider, salt, brown sugar, orange peel, bay leave, garlic, rosemary and water brine.

Roasted at 450 degrees for 30 minutes, and 90 minutes at 350 degrees. Trickling Springs butter under the skin. Grapeseed oil rubbed over the top, and a poultry mix sprinkled everywhere.

Really moist turkey this year. The right amount of time in the brine, and it wasn’t overcooked. I have a crock pot full of bones, skin and the innards, with a couple gallons of water, which will cook all night to make stock.

Side dishes this year. My take on classics, but revved up a bit.

Mashed potatoes included goat cheese, butter and milk. These were CSA potatoes, a mix of Yukon Gold and white potatoes.

I made a green bean casserole using Breezy Willow’s beans. Blanched them first, then put them in a casserole with some organic condensed cream of mushroom soup I got at Roots. Half of the container became the base for the gravy. The onion on top the beans was a CSA yellow onion that I roasted yesterday until it was crispy. It added flavor without all that breading and greasiness the canned onions have.

The dressing was simple. Bread cubes mixed with turkey stock (I started the stock early today, using only the innards and water, celery, carrots and scallions. Cooked up about 4 ounces of Boarman’s homemade country sausage and mixed it in. A little sage, salt and pepper. Baked alongside the green beans.

Complementing the meal, a Finger Lakes Pinot Noir. 2007 Konstantin Frank.

Really a soft wine. Glad we opened it. It is just starting to fade a bit.

All in all, just enough food. I didn’t go overboard on anything other than making just a bit too many potatoes.

As for leftovers, I have two cups of shredded turkey to make a soup. One leg to use for a lunch salad next week. One complete breast for a salad or dinner. A couple of thighs for another dinner.

Keeping it local. Supporting small businesses. I may not have shopped today, but I did pretty well.
