Guilt Free Corn Chowder

Compliments of learning new techniques from other CSA bloggers. When you get a huge amount of root veggies, you have the option of making soups and stocks out of them. Roasting them first gives them even more flavor.

Roasting the veggies is fairly simple. Rutabaga, turnips, onions, leeks. I cut them large if I am going to make a soup base. Sprinkle them with whatever looks good in the spice rack. Today I used Emeril’s Essence, thyme, parsley, paprika, garlic powder and sage. I also found that with the mild weather, my herbs are still hanging in there. I brought in some oregano, rosemary and thyme to add to the pan. They will be discarded at the end.

The herbs add that extra level of taste to the veggies and they smell so good while roasting. I roasted the veggies at 350 degrees, after drizzling with a neutral oil. I used grapeseed. I added the secret ingredient too. Almond milk. I put a splash in the pan. The rest of the quart will be added to the soup while it is cooking on the stove top. This is how I get a creamy soup base with no cream. One hour in the oven.

Dump everything into the pot. Add the rest of the almond milk. Let it simmer for at least an hour, and blend in a blender to the consistency you want. I added garam masala to the pot too. This is what it looks like when you are finished.

I then added the last of the England Acres chicken, and corn from the freezer. The last of the TLV corn that I blanched and froze in October.

I put it all in the pot and just turned it on as low as it will go. The flavors should blend nicely and in a few hours we will have corn chowder for dinner. Served with some bread from a local bakery, bread I found at England Acres Saturday, it will be a satisfying locally sourced dinner. Except for the almond milk and the spices.

Dense, chewy, really good. Now I have a new source for breads. Easy to pick up, they even sell frozen loaves at England Acres on weekends when the farm store is open. Fresh or frozen. Another good locally baked bread to add to my list.

Besides dinner tonight, I got a pint and a quart of the soup base. Already in the freezer, to be used when my CSA runs out in two weeks. I still need to use up these carrots and the rest of the root veggies in the crisper.

I know that having a full share in a CSA gives much more than two people can eat in a week, but using this freezer has made it work, and for the ten weeks we don’t get veggies, I won’t be using the grocery stores much as a source. I will be using what came all summer and fall.

I gave back a Napa Cabbage to get onions. With the venison coming, I needed onions to make chili. The Romanesco is one of my favorite items. It has a nutty flavor. I love roasting it in the oven with Indian spices and drizzled with butter.

As for the broccoli, this isn’t all of it. I must have grabbed and eaten three or four crowns as I was emptying them out of the bag. Nothing as sweet as fresh veggies, one day out of the fields.

Now, the spinach as well. I had too much to fit in the spinner. Had to do it in two batches. I decided to leave some out to have for dinner with some sockeye salmon. My husband came home and started eating it right out of the colander. It is sweet, tender, packed full of nutrients. Yes, we are weird. We snack on fresh veggies like they are candy or fruit. There was 17 ounces of organic spinach in the bag. I bought organic baby spinach last weekend as I wanted salad greens. They cost me $4 for five ounces. Today we got at least $12 worth of organic spinach.

My husband is also very happy, as we got fingerling potatoes. These little gems are such a treat. Parboil them first. Pop them in a pan with some butter, rosemary, garlic and salt and brown them. They are so good this way. They will be part of dinner tonight as well.

Fall CSA Week Four Happy Thanksgiving!

I have already posted about things I give thanks for having. The freshest, tastiest vegetables to add to our meals is certainly a contender here. Today we got a dozen wonderful items. Lots of goodies like baby romanescu cauliflower. A treat.

I have never had Carnival squash. And, watermelon radishes only once before. Lots of supporting items here for Thanksgiving dinner. Potatoes, carrots, celery. There was an alternative of green cabbage for some boxes, but not in mine. So, no sauerkraut in the near future.

I haven’t done the math yet today, but when I get a chance I will. The radicchio will probably be grilled if the weather holds. The squash I have to research. Maybe some pumpkin pancakes this weekend. I am seeing pumpkin recipes everywhere.

Costco Revisited

I have to admit, with all the new stores, and the changes I have made to cooking from scratch, I seem to have abandoned Costco. Not that it is such a bad thing. But, it surely shows that bulk buying is no longer part of my food budget.

We got our rebate check last week. It was roughly half of last year’s check, and didn’t cover the difference between basic membership, and the more expensive rebate membership. It looks like we will be changing our level when I renew.

From a produce standpoint, they have never been a good deal for me. Too many times, produce went bad far quicker than what we bought in the grocery stores, and now that we have almost year round CSA membership, I definitely can tell the difference. Everything we get from our CSA lasts longer, since it was picked one or two days before we receive it. Greens stored in our spinner can last up to two weeks, without turning or going all slimy on me.

I was there on Friday. We needed batteries and printer cartridges. I also wanted to pick up a few baking supplies to make Christmas cookies. I did end up finding one of the best deals for me there. The ends of wild ahi. They don’t always have it.

I like to buy it this way, then portion it out into meal sized medallions and one long strip suitable for slow cooking in tomato sauce in the oven. I get four or five meals from one of these. I use Costco’s cling wrap to put the individual portions into, and then put it all in a freezer bag. It does minimize any sort of drying out, and freezer burn.

The other staple in my pantry that I still buy in bulk there is the Pacific brand low sodium organic chicken stock. I use it often. It is the base for some of my couscous dishes. For risotto. A little in the bottom of a pan when I am deglazing it after sauteeing something. It is always in my fridge. My good homemade stocks are reserved for soups. These soups are 6 for $12 at Costco. Way less expensive than Roots. As for other grocery stores, they don’t all carry the low sodium one.

This last visit, I went in and checked out the produce. A good deal is only a good deal when it doesn’t get rotten. I can’t see buying a dozen cucumbers, or a huge bag of fruit.

We now have CSA pickups 42 weeks of the year. It will be interesting to see what I find around here from New Years until the beginning of March when we start up with Breezy Willow. I may be doing quite a bit of shopping at Roots, or head over to Wegmans to check out their winter organic produce. Thankfully, Olney will have their Sunday market starting in January, and weekly visits to Breezy Willow and TLV will keep me in eggs and meat.

Now that I have made the switch to minimize processed foods, unless we need to put tires on my husband’s car, it makes no sense to keep the more expensive membership at Costco. I suppose we have finally gone beyond the acquiring stage of our lives, and are moving into divesting ourselves of things. It was nice to get my camera, and my husband’s laptop there. As for food and clothes, we have cut back the purchases there. Books. Nope. Software, too. Christmas. We all made a pact. No more gifting. We are rightsizing these days.

I do still go there for vitamins, allergy pills and basic drug store stuff like Tylenol. Toothbrush heads. Toothpaste. Things we use daily and that make sense to buy at their better prices.

This is such a change from how I shopped ten years ago. I have to admit I didn’t think I could be so different when it comes to finding those “bargains”. Nowadays, to me, this is the bargain. A box full of just picked goodness. Can’t wait to see what we get tomorrow.

The Fall CSA, Three Weeks In

I can tell Thanksgiving is here. The veggies attest to it.

Sandy Spring Fall CSA Week 3 of 2012

I keep playing “I’m celery the eighth, I am, celery the eighth I am, I am” in my head. These two heads of organic celery were just massive. More than enough for stuffing, or dressing (your preference), and for under the turkey and to use when making turkey noodle soup with the leftovers. Of course, we are also getting veggies next Tuesday (early because the holiday is Thursday), so we may be really up to our ears in celery.

Here’s the list, but modified to show we got extras of a few things, in order to make up for the lost week. Next to each is the cost from my visit today to Harris Teeter. Organic, when possible. Otherwise, regular. The popcorn a guess, based on cost of microwave popcorn in the store. I round up the penny.

The added up cost for this week is $49.65. Cost for a share $31.25 a week. Add to last week where it was $42.22 (remember we lost a week due to Sandy), total is now $91.87. I think. I may need to check my math but it looks like after week 3 we are almost even with what we pay. Down only $2. If they keep adding amounts like they did this week, twice the celery as originally stated. A very large amount of turnips. We should be way ahead by Christmas, as is usually the case with this CSA.

As for the turnips, Hakurei are a delicacy. A small bunch of them (less than 8 ounces in weight) were $2.99 at Harris Teeter today. We got two and a half pounds of them. I really love these turnips. They are sweet. They can be eaten raw or cooked. I am thinking of taking them to my brother’s for Thanksgiving, baked in a light butter sauce with Brussels Sprouts. I need to find Brussels sprouts at one of the last markets this weekend.

As for that popcorn, we found a recipe that says, just put it in a paper bag in the microwave. We need to try this.

Last night was “Use up the CSA” dinner. My roasted root veggies before baking. I added some of my bag ripened heirloom tomatoes to the pan, too.

After they finished, I boiled some pasta, added a few cubes of my garlic scape pesto I took out of the freezer and had a primavera of sorts that was so good. We did eat the last grillers from TLV on the side.

Not bad for using up leftover veggies, roasted with olive oil, salt and pepper.

Summary of the Summer CSA

Twenty five weeks. 285 items. 130 different items. That is where we ended up this year with our Sandy Spring CSA. We had quite a few brand new discoveries this year. Good ones like cheese pumpkins. Not so good ones like cardoons. Which were woody.

Some interesting observations. We did not get asparagus at all. Strange, but never.

The most delivered item was collard greens, eight times. Followed by broccoli, bok choy and zucchini, seven times each. Like this week with collards, broccoli and a humongous bok choy.

A typical May delivery. Lots of variety. Large amounts. Beautiful organic veggies. Can’t beat what we get. We pay $740 for 25 weeks of veggies and some fruit. All organic. A real bargain. But, you have to like veggies. Which we do. I did some creative swapping this year and ended up with at least 8 deliverables of roma tomatoes, suitable for canning. Organic roma. Huge beautiful tomatoes that now live in my freezer to make winter dinners. All told roughly 35 pounds of romas.

The weirdest thing we got? The African horned melon. At least in my opinion. And, I didn’t find it that appealing. I now know in the future if it ever shows up, it is back into that swap box.

Coolest new thing we got? Edamame on the stalk. I loved boiling them in salted water and eating them like peanuts. They are so good that way. But, cleaning a stalk full of edamame is a little messy and time consuming.

All in all, definitely worth the money. I quit figuring out the savings when we were almost $200 ahead of what it cost to join. Next year we will be back. In fact, since I am doing Breezy Willow’s winter CSA, it overlaps for four weeks and we will be getting double deliveries for three weeks.

The fall CSA from Sandy Spring was supposed to start today, but Hurricane Sandy got in the way. No delivery. They are promising to make it up, and I bet they deliver like they promise. With 80 farmers spread across the Lancaster region, they will pool resources and find us good food to bring down on the trucks next week. Hope their losses were minimal, and recoverable. Thankfully this hurricane hit after summer CSA, which is way larger than the fall.

If you have a little sense of adventure, this CSA is a bargain, and trying new veggies is the challenge that keeps it interesting. After all, corn, tomatoes, green beans and onions get boring. We all need a little kohlrabi, turnips or rutabaga to fall into our baskets and make us think differently about what we eat. My roasted veggies included all three plus a sweet potato.

Week Twenty Two of the CSA

A baker’s dozen. Thirteen items. That is what we got today. Three weeks to go.

As for value this week, it is pretty much off the charts. I did some comparisons from Wegmans and some from Harris Teeter. The numbers say this.

Broccoli $2.50. Broccolini (close to GaiLan) $3.50. Kale $2.50. Kohlrabi not found. Beets $2.50. Lettuce and Escarole $2.50 each. Sweet Potatoes $2.50 a pound X 3 pounds is $7.50. Pumpkin (I could only find exotic squash for $1.70 a pound times 3 pounds is approximately $5. Cilantro $2. Radishes $2. Yukon Gold Potatoes $5 for 3 pounds. Onions $2 each for organic, so $6.

Total for organic veggies comparing it to supermarket prices = $43.50 not counting the kohlrabi. We pay $29.72 a week for our organic box of veggies. Again, we see that buying from the CSA is a good value.

Now, kohlrabi. Not something we would have bought on our own. Actually, we love it now that the CSA has introduced it to us. My recipe from last spring.

As for the Long Island Cheese Pumpkin, it is destined to become a pumpkin pie courtesy of this recipe.

And even though I was generous and used a low number for the cost of the leaf lettuce, this puppy was so huge it didn’t fit in the salad spinner. There will be lots of salads and lots of good food this week. It will be crazy though, since we have dinner engagements three times in the next week. Lots of lunch salads.

Cardoons, Horned Melon and Soy! Oh My!

Week 17 of the CSA. Three new and exciting items. Twelve goodies overall. The haul.

Cardoons are also new. I found a dozen Mario Batali recipes on the internet, to try. They look like they are related to artichokes. Should be interesting.

I am not even going to attempt to price this out. I have no idea what edamame, horned melon and cardoons cost, if you can find them. The beets, tomatoes and carrots, all organic, make the cost worth it. Stay tuned this week to see what I cook with this basket.

Essential CSA Items

A CSA is only a great deal when you can use the items without them going bad before you eat them. Having read lots of comments across the internet about a reason not to join a CSA, the “I don’t eat enough produce to make it worth it”, I can see where it doesn’t work due to lack of time, space or family food preferences.

I just read a few posts on the I Want the Columbia MD Wegmans Facebook page about produce going bad quickly when bought in stores. The freshest produce is obviously just picked produce. The CSAs get you produce within one or two days of harvest. Anything trucked to stores is subject to storage variation, transportation problems and who knows what else. That is why so much is packaged, processed and full of preservatives.

Organic eliminates some of that, but is costly. A CSA with organic produce is a bargain. But not if the produce sits too long and goes bad. I have a few essential items that help me prolong the life of the produce, and use up my CSA.

One essential item is a salad spinner. Two, if you have room for them. I will be getting a second one before the fall CSA and the deluge of greens begins again.

No greens in it then. It had radishes and the last of a month old red cabbage, still crisp and still good to use in salads. Last night the arugula from David’s joined it. The arugula will be used in that pesto, and in a melon carpacchio recipe I want to try.

The second essential item in my storage drawer is my cache of “green” bags. They are indispensable when the crisper drawers are full. These you do need to change occasionally, since some really fresh veggies continue to give off moisture even if they look dry when they go into the bags. I keep beans for up to two weeks without them going bad or getting slimy. It extends my useful period for veggies when one week you don’t get something you like to use with others.

The other cute little gimmicky items that work well are my citrus and onion keepers. I use so much citrus in dressings and marinades, and always seem to need part of an onion. These really do keep the onion smell out of the fridge, and keep lemons or limes fresh after you only used half, or had zested them.

My most indispensable CSA saving item is the new chest freezer. A good deal at Costco. Seven cubic feet. It is already half full of simple frozen items to be used all winter long. Even if you are canning challenged, blanching, peeling and freezing tomatoes, charring and peeling peppers, making frozen berries for smoothies, or using ice cube trays to make syrups or pestos, you can use up excess fruits and veggies and herbs and have good food all winter.

It makes the cost of the CSA definitely worth it, with taking the time to pack and store it. Also worth it to go to local UPick farms, like Larriland. Some of my projects this summer are here. We picked six pounds of strawberries, froze some whole, some sliced and some pureed.

Garlic scape pesto is another great ice cube tray project. About ten minutes to throw everything in the blender, then pour and freeze. I no longer follow a recipe, I just use up the scapes I have, adding nuts, parm, and olive oil. Salt and pepper.

Oven drying tomatoes. I make tiny plastic containers of these all summer. They are heaven on pasta in February. Cut them in half. Sometimes I seed them, sometimes I don’t. Sprinkle a little sugar, salt and pepper on them. Drizzle olive oil. Bake at a low temp, like 200 degrees, for a few hours. I usually do this on a day I am doing laundry or a home project and can ignore them.

My final essential item is my crock pot. My use up the CSA stews give us two or three meals, and sometimes I do freeze one portion of what I made, since leftovers get tiring after the second dinner. A layer of sauce, a layer of veggies, some sausage or chicken or beef. Easy to throw in, even with frozen meat, and come home hours later to dinner. Like chicken soup. I added frozen stock and a frozen chicken to these veggies and had three meals from it.

If you aren’t a CSA type person, try the farmers markets and look for bargains, like slightly bruised peaches. They can be cut up and frozen, for smoothies all winter. Or, apples. Or, like right now. Blackberries at Larriland. I froze whole berries and made syrup.

Now, excuse me while I go blanch a boatload of tomatoes to freeze. Eight pounds of canning tomatoes yesterday.

Six pounds of tomatoes. That’s what we got today, not counting the cherry tomatoes. The CSA pickup had some new things and just what we need to make salsas. Peppers and tomatoes.

The French melon is adorable, and not found anywhere I have looked. I know specialty melons are costly, so estimated it.

I will be roasting peppers and making salsa, as well as freezing some of them. We got a lovely mix this week. The poblanos are always one of my favorites.
